Soba Noodles with Shitake Mushrooms

  • 2 sweet potatoes, peeled and cut into small cubes
  • A little oil
  • 2 cloves of garlic
  • Salt
  • Coarse black pepper
  • Taste of Asia sesame oil
  • 50 grams Taste of Asia dried shitake mushrooms
  • 3 leek stalks, halved lengthwise and thinly sliced
  • 4 Tbsp Taste of Asia light soy sauce
  • 250 grams of Taste of Asia soba noodles
  • Sprinkling of black sesame seeds

Cooking Method

1. Preheat the oven to 200 degrees.

2. Heat oil in pan, fry the garlic, and add the chopped sweet potatoes. Add oil to the sweet potatoes. Add salt and pepper and bake for about an hour until the sweet potato softens.

3. Soak the shitake mushrooms in a bowl of warm water for 5-10 minutes, remove from the water, squeeze out the water and slice into thin strips.

4. Heat some sesame oil in wok, add mushrooms, stir for about 2-3 minutes and set aside.

5. Heat more sesame oil in wok, add leeks and stir until golden brown.

6. Add the baked sweet potato cubes, mushrooms, soy sauce and black sesame seeds. Stir fry for a few seconds and set aside.

7. Bring a pot of water to boil, add a little sesame oil and salt, and add the soba noodles. Cook until tender, about 2 minutes. Drain, add the noodles to the sauce and serve immediately.
