Pad Thai – Stir Fry Rice Noodles

INGREDIENTS thailand_chef_big

  • 200-300 grams Taste of Asia wide rice noodles soaked in cold water
  • 150 grams of chicken breast or tofu strips
  • 1 chopped onion
  • 3 spring onions, diagonally sliced
  • 1 cup sprouts
  • 1 red chili, thinly sliced
  • 2 tsp crushed garlic
  • 1 carrot cut in thin matchstick pieces
  • 1 egg
  • 1 Tbsp Taste of Asia sweet chili sauce
  • 1 Tbsp tamarind paste, cooked and strained
  • 1 tsp oyster sauce
  • 1 Tbsp Sempio soy sauce
  • ½ tsp Taste of Asia sesame oil
  • 1 tsp sugar
  • Pinch of salt

Garnish with:

  • Crushed peanuts
  • Coriander
  • Lemon wedges
  • Cucumber

COOKING_METHOD

1. Sear the soaked noodles in hot water.

2. Heat the wok, add the oil and egg and mix.

3. Add the onion and carrot to the wok and stir fry.

4. Add the garlic and noodles to the wok and stir fry.

5. Add the soy sauce, sesame oil, sugar, salt, sweet chili sauce and oyster sauce until almost ready, then add the green onion, sprouts and red chili.

6. Divide into serving bowls and garnish.
