Tod Man Pla – green curry fish cakes (patties)

INGREDIENTS thailand_chef_big

  • 1 bass or sea bream fillet, skinned, deboned and finely chopped
  • 2 cloves chopped garlic
  • 1 tsp Taste of Asia green curry paste
  • 2 kaffir lime leaves, finely chopped
  • ½ tsp ground black pepper
  • 1 Tbsp oyster sauce or vegetarian mushroom sauce
  • 1 Tbsp fish sauce
  • 1 Tbsp palm sugar
  • ½ tsp oil
  • 2 Tbsp Taste of Asia coconut cream
  • 1 egg white
  • ½ tsp corn flour
  • For serving: Taste of Asia green chili sauce

COOKING_METHOD

1. Place the kaffir lime leaves, garlic, curry paste and egg whites into the bowl, and stir the mixture until it becomes a sticky paste.

2. Add the coconut milk, oyster sauce (or mushroom sauce), fish sauce, sugar, corn flour and pepper, and stir well.

3. Form into patties and fry over medium heat. Serve with green chili sauce.
